Creamy Coconut Chia Seed Pudding

I'm excited to share with you a delicious recipe that not only tastes super YUM but also supports your body's well-being. Packed with wholesome ingredients and bursting with flavor, this creamy coconut chia seed pudding is a perfect treat for any time of the day. Let's dive into the recipe and explore the goodness it brings!

Ingredients:

  • 1/4 cup chia seeds

  • 1 cup coconut milk (you can use any milk of your choice)

  • 1 tablespoon pure maple syrup or honey

  • 1/2 teaspoon vanilla extract

  • A pinch of sea salt

  • Optional toppings: Fresh berries, almond slices, pumpkin seeds, nut butter, shredded coconut, or granola (just to name a few!)

Instructions:

  1. In a mixing bowl, combine the chia seeds and coconut milk. Stir well to ensure the chia seeds are evenly distributed and submerged in the liquid.

  2. Add the maple syrup or honey, vanilla extract, and a pinch of sea salt to the mixture. Stir again to incorporate all the ingredients thoroughly.

  3. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and develop a pudding-like consistency.

  4. After chilling, give the pudding a good stir to break up any clumps and distribute the ingredients evenly.

  5. Serve the pudding in individual bowls or jars. Top with your favorite toppings! Enjoy your creamy coconut chia seed pudding mindfully, savoring each spoonful and appreciating the nourishment it provides your body and soul.

Benefits of Chia Seeds:

  2. High in Fiber: Just a small serving of chia seeds provides a significant amount of dietary fiber, promoting digestive health, regulating blood sugar levels, and aiding in weight management.

  3. Loaded with Antioxidants: Chia seeds contain antioxidants that help protect your cells from damage caused by free radicals, supporting overall immune function and reducing the risk of chronic diseases.

  4. Plant-Based Protein: Despite their small size, chia seeds are packed with protein, enhancing the nutritional value of the nourishing meals theyā€™re added to.
