Protein Snickers

So, I was playing around in the kitchen the other day (as one does), and somehow these Protein Snickers bars came to life. And let me tell you—I’m obsessed. Packed with rich flavors, healthy fats, and just enough protein to keep you satisfied, these bars are basically everything you need in a treat. I’m pretty sure you’re going to love them too!

Ingredients:

For the Nougat:

  • 3/4 cup oat flour

  • 1/2 cup almond flour

  • 1/4 cup vanilla protein powder (I use Truvani)

  • 1/4 cup pure maple syrup

  • 2 tbsp coconut oil, melted

  • 1/2 tsp sea salt

  • 1-3 tbsp milk of choice (as needed to adjust texture)

For the Caramel:

  • 3/4 cup peanut butter (smooth or crunchy)

  • 1/4 cup maple syrup

  • 1tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • 1/2 tsp sea salt

  • 1/3 to 1/2 cup chopped roasted, unsalted peanuts

For the Chocolate Coating:

  • 1 cup chocolate chips or chopped chocolate bars (I use Hu chocolate)

  • 2 tsp coconut oil

  • Flaky sea salt, for topping

Instructions:

  1. Make the Nougat Layer:

    • In a large mixing bowl, combine the oat flour, almond flour, vanilla protein powder, and sea salt.

    • Stir in the maple syrup and melted coconut oil. Mix until everything is fully incorporated.

    • Add 1 tablespoon of milk at a time (if needed) until the mixture reaches a dough-like consistency that can be easily pressed into the bottom of your loaf pan.

    • Press the mixture evenly into the base of a lined loaf pan (I use a standard 9x5-inch loaf pan). Place in the fridge to set while you prepare the caramel.

  2. Prepare the Caramel Layer:

    • Combine the peanut butter, maple syrup, coconut oil, vanilla extract, and sea salt in a mixing bowl. Stir until the mixture is smooth.

    • Pour the caramel mixture evenly over the chilled nougat layer. Then, scatter the peanuts on top, gently pressing them into the caramel layer.

    • Place the pan into the freezer to set for at least 2 hours.

  3. Slice the Bars:

    • Once the caramel layer is set, remove the pan from the fridge and slice the nougat and caramel into bars or squares of your desired size.

  4. Dip or Drizzle in Chocolate:

    • In a small microwave-safe bowl, combine the chocolate chips (or chopped chocolate bars) and coconut oil. Microwave in 20-second intervals, stirring between, until the chocolate is completely melted and smooth.

    • To dip: Dip each bar into the melted chocolate, ensuring it’s coated evenly. Set the dipped bars on a parchment-lined tray.

    • To drizzle: For a lighter chocolate coating, drizzle the melted chocolate over the bars using a spoon or fork.

    • Sprinkle the top of each bar with a pinch of flaky sea salt for the perfect sweet-and-salty finish.

  5. Set and Serve:

    • Place the bars back into the fridge for at least 1 hour, or until the chocolate is fully set.

    • Once everything has chilled, the Protein Snickers bars are ready to enjoy!

    • Store in an airtight container in the fridge for up to a week (if they last that long!).
