Egg Roll in a Bowl

Ingredients:

Protein:

  • 1 lb ground chicken

Vegetables:

  • 2 cups green cabbage, chopped

  • 2 cups purple cabbage, chopped

  • 1 cup shredded carrots

  • 1 avocado (for topping)

  • 1/3 cup green onions, sliced (+ more for garnish)

Aromatics & Seasonings:

  • 1 ½ tbsp minced garlic

  • 1 tsp minced ginger

  • 1 tsp onion powder

  • 1 tsp red pepper flakes

Sauces & Liquids:

  • ¼ cup coconut aminos

  • ¼ cup soy sauce (GF, if needed)

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tbsp honey

  • 1 tbsp EVOO or avocado oil

Toppings & Garnishes:

  • Sesame seeds

  • Sriracha or sriracha mayo (for topping)

Instructions:

  1. Prepare the Ingredients:

    • Chop the green cabbage, purple cabbage, and shred the carrots. Slice the green onions and set them aside (reserve a little for garnish). Slice the avocado for topping.

  2. Cook the Ground Chicken:

    • Heat 1 tbsp of your preferred oil in a large pan over medium-high heat.

    • Add 1 tbsp minced garlic and sauté for about 1 minute until fragrant.

    • Add the ground chicken and cook for 7-10 minutes, breaking it apart as it browns. Stir occasionally.

  3. Make the Sauce:

    • While the chicken is cooking, whisk together the coconut aminos, soy sauce, rice vinegar, sesame oil, honey, red pepper flakes, minced ginger, remaining minced garlic, and onion powder in a small bowl.

  4. Combine and Stir-Fry:

    • Once the chicken is browned and cooked through, add the chopped cabbage, shredded carrots, and 1/3 cup of sliced green onions to the pan.

    • Pour the sauce over the mixture and stir until everything is well coated.

    • Sauté everything for an additional 5 minutes, stirring occasionally, until the cabbage softens and the liquid from the sauce reduces.

  5. Serve:

    • If you want to make this dish heartier, serve over rice (white, brown, or cauliflower rice work great).

    • Top with the sliced avocado, a sprinkle of sesame seeds, and extra green onions for garnish.

    • For an extra kick, drizzle with sriracha or a simple sriracha mayo (mix equal parts sriracha and mayo, about 1 tbsp each).
